Zucchini Fritters

There is a meal that I just love – these babies are quick, tasty, and they can be used for breakfast, lunch and dinner!! Also work in lunch boxes and at a picnic – so you can see I’m pretty excited about this recipe. It’s GAPS and Paleo legal, and I highly recommend you try these for your kids – mine devour them!

As per usual, with my recipes, you can go with pretty much anything you have as ingredients but the basics are:


  • Zucchini
  • Carrots and/or any other vegetables you have that you like
  • Eggs
  • Cheese (optional)
  • Diced meat (optional)
  • Salt, pepper and herbs



  1. Whisk eggs in a bowl
  2. Grate zucchini, carrots, cheese and any other veges you are using
  3. Add to eggs
  4. Add flavourings
  5. Brown both sides in a frying pan with butter


Serve with salad, or a topping of  salsa, cream cheese, tomato sauce or chutney (mmm, my mouth is watering right now just writing about them!)


Depending on how many people are eating, I’d use an average sized zucchini to approx 4 large eggs. You can play around with the quantities – no matter if its too runny, since it will still cook up nicely in the pan.

I love cheese and put it in everything – use about 1/2 a cup. You can leave it out or can replace with some diced cooked meat (beef, lamb, salami, chicken)

Use whatever herbs do it for you – I’m a little boring in the herb department and usually just throw in some dried mixed herbs. You could just as easily use some fresh thyme and basil
