Easy Cookies

I was presenting at a seminar yesterday, where families are learning how to improve their children’s lives. There are so many children who are suffering needlessly, and just by equipping the wonderful parents, they can be transformed to their true potential.

Sorry to get all deep and meaningful on you, but it just struck me, looking at all the faces of the parents who were wanting answers – struggling with their children who aren’t as they may have expected (or wanted) them to be.

We are at a point down the track where we can look back and see the changes – we can see the benefits of correcting the imbalances in the body. Our boys are so much happier, and integrate in society who are largely unaware that there was ever any behavioural issues at all!

I have been stimulated to post some of my often-used recipes, in order to share what has become our new norm, so in the next while expect some of my favourites!

Today’s is super-simple (well, most of my recipes are!) and can be done at the end of any other baking, when the oven has been on, and you want to make a snack.

This recipe is adapted from the Forgotten Cookies recipe.

 

Meringues With a Twist

Ingredients

2 egg whites (room temperature)

2 TBsp honey (adjust to your taste)

pinch of salt

1/2 tsp vanilla essence (make sure it is real. not artificially flavoured)

3/4 cup almonds, roughly chopped

3/4 cup dried fruit

Method

  1. Turn oven on to heat to 180°C
  2. Beat egg whites until semi-stiff
  3. Add honey and beat till firm peaks form
  4. Stir through the vanilla, salt, nuts and fruit
  5. Place small dollops on baking tray covered with baking paper
  6. Turn the oven temp off, and place cookies inside, leaving for 3 – 4 hours

 

Note: You can play around with the addition of the nuts and fruit here – I added a 1/4 cup of coconut flakes, and used almonds with dried cranberries. You can use seeds in here. (The original recipe called for chocolate chips and almonds) Let your children make this recipe and they can dream up all sorts of delicious combinations!
